Job Description
As a Quick Service Culinary Manager, you will be responsible for the creation of a personalized experience through your supervision of both front of house & culinary employees. Your comprehensive knowledge of service options & culinary expertise along with your ability to communicate expectations will enable your teammates to surprise and delight guests during every stay.
PRIMARY JOB DUTIES:
Duties include, but are not limited, to the following:
• Responsible for assisting the General Manager and Chef de Cuisine in creating a world class dining experience throughout assigned operations.
• Ensures all stations are set up according to standards and maintained throughout the shift with 100% accuracy.
• Oversees the production of all menu items and recipes and steps in to assist as necessary to ensure standards are being met and guest satisfaction is achieved.
• Demonstrates new cooking techniques, recipes, and equipment to kitchen employees.
• Continuously controls product waste and maintains proper par levels of all kitchen items.
• Work in conjunction with General Manager and Chef de Cuisine to maintain a cohesive department to ensure professional interaction with employees and guests.
• To ensure that the budgeted profit of the department is maintained, analyze financial results and take the appropriate action in areas of poor performance.
• Work in conjunction with General Manager and Chef de Cuisine to ensure employees are delivering consistent service to all guests.
• Responsible for knowledge of departmental / hotel service essentials.
• Ensures that orders are taken correctly and delivered without delay.
• Address guest concerns.
• Administer all disciplinary action on assigned shift.
• Responsible for administrative duties on assigned shift including payroll, scheduling, days off, section assignments, early outs, covering call outs etc.
• Responsible for knowledge of menu items and ingredients, functions of service employees, house and hotel rules and regulations, and alcohol awareness training.
• Responsible for knowledge of how other departments relate to the quick service operations, and proactively interact with them to coordinate activities or correct problems.
• Supervise, train and plan, direct all employees on assigned shift.
• Ensure that all rules, regulations, and procedures are in compliance with by employees under supervision.
• Document incidents and events involving guests or employees accurately and in detail.
• Inspect uniforms, cleanliness, identification, etc.
• Keep everyone informed of new procedures and hold daily line ups.
• Ensures a safe working environment.
• Promote teamwork among employees.
• Must provide courteous and friendly service to all vendors and employees.
• Performs other related duties as assigned/required.
• Responsible for complying with Title 26 policies and procedures.
Job Requirements
QUALIFICATIONS:
Required:
• At least two years of previous restaurant management and/or professional kitchen environment experience.
• Possess, or be able to obtain, a valid Food Handlers Safety Training Card and Serv Safe Managers card.
• Working knowledge of all Food and Beverage aspects.
• Strong written and verbal communication skills with the ability to effectively communicate in English.
• Working knowledge of Microsoft Word, Excel & Outlook.
• Possess a true understanding of cooking techniques and proper knife skills with the ability to teach them.
• Skill in developing, leading and maintaining guest relations.
• Ability to maintain confidentiality of sensitive information.
• Work effectively with other departments and guests.
• Title 26 knowledge.
• At least 21 years of age.
Preferred:
• At least two years of experience working in a quick service management environment.
• Completed formal culinary training or apprenticeship.
• Bachelor's degree in a related field.
• Previous work experience within a high volume luxury resort establishment.
• At least one year of experience managing a team under a Collective Bargaining Agreement.
• Experience working with Infogenesis.
• Experience working with Stratton Warren.

Work is performed in an office environment and throughout the property in all locations. Must be tolerant to varying conditions of noise level, temperature, illumination and air quality. The noise level in the work environment is usually moderate. When on the casino floor, the noise level increases to loud. A casino environment typically allows smoking.
Constant contact with executives, department management, applicants, employees and guests is necessary. Requires prolonged sitting or standing and mobility. Requires bending and reaching. Requires transporting, pushing, pulling, and maneuvering items weighing up to 25 lbs. Requires eye/hand coordination. Requires use of standard office equipment. Requires basic math. Ability to push and/or pull file cabinet drawers weighing up to 5 lbs. Requires the ability to distinguish letters, numbers and symbols. Ability to comply with Policies and Procedures, Job Description, daily memorandums, chemical labels (MSDS) and other instructions.
