Isle of Capri Casino® Hotel in Lake Charles, LA is dedicated to providing guests with an exceptional gaming and entertainment experience. The property features over 26,000 square feet of gaming space with more than 1,150 slot machines, 36 table games, 13 poker tables, 3 restaurants and 490 hotel rooms. The Lake Charles property employs over 700 Team Members.
Responsibilities
JOB SUMMARY
The Chef D is responsible for all food production in terms of quality, presentation and cost for all food outlets, banquets and bakery.
ESSENTIAL DUTIES & RESPONSIBILITIES
• Assists in the development and management of the budget for all F&B outlets.
• Trains and manages the staff to efficiently produce high quality food in a safe and efficient manner.
• Controls food cost by establishing purchasing specifications, storeroom systems, product storage, portion control, and waste management.
• Ability to solve complex problems, and function efficiently under timelines and pressures.
• Oversees the hiring, training and evaluating of kitchen staff.
• Other duties as assigned.
KNOWLEDGE, SKILLS & ABILITIES
• 7+ years of culinary experience with 3+ years of management experience preferred.
• Culinary Degree preferred.
• Sound working knowledge of high volume kitchen production.
• Knowledge of sanitation laws, health regulations, and applicable OSHA regulations.
• Ability to obtain and maintain a valid state gaming license.
PHYSICAL DEMANDS & WORK ENVIRONMENT
• Perform duties under pressure and in an interruptive environment.
• Must be available to work a varied schedule, including weekends and holidays.
• Must have basic computer skills
• Able to stand for long periods of time.
• Frequent pushing, pulling, bending and lifting.
• Work environment may include variable temperature, lighting and noise levels.
