Job Description
Wynn Resorts is the recipient of more Forbes Travel Guide Five Star Awards than any other independent hotel company in the world. Wynn Las Vegas opened on April 28, 2005 and was once again named the best resort in Nevada on Condé Nast Traveler’s 2018 “Gold List,” a title received for the tenth time. Wynn and Encore Las Vegas feature two luxury hotel towers with a total of 4,750 spacious hotel rooms, suites and villas, approximately 192,000 square feet of casino space, 21 dining experiences featuring signature chefs and 11 bars, two award-winning spas, approximately 290,000 square feet of meeting and convention space, approximately 103,000 square feet of retail space as well as three nightclubs, a beach club and recreation and leisure facilities. In addition to two luxury retail esplanades, a Strip-front expansion, Wynn Plaza, is currently under construction and is scheduled to be completed by the third quarter of 2018.
The Chef de Partie is a lead position
Job Requirements
• The Chef de Partie supports the pastry chefs and is responsible for supervising kitchen staff and working in all stations within the kitchen, ensuring the preparation and plating of all hot and cold foods to outlet standards, guiding and training culinary employees.
• Maintains the cleanliness and sanitation of work areas and equipment in accordance with Health Department standard.
• Maintains solid knowledge of all food products, identify and safely use all kitchen equipment maintain a solid menu knowledge and attention to detail with plat presentation, prepare all dishes following recipes and yield guides, plate deserts. Complete opening duties, set up work station with required mis en place, tools, equipment and supplies, check production schedule and pars.
• Must be able to breakdown work station and complete closing duties by returning all food items to the proper storage areas, rotate all returned product, wrap, cover, label and date all items being put away, straighten up and organize all storage areas, clean up and wipe down food prep area, reach-in and walk ins.
Job Requirements
• Candidate must be able to communicate in English, read and follow recipes 2nd language a plus.
• Requires a minimum of 4 years pastry knowledge, preferable in a high volume, luxury hotel/restaurant.
• Candidate must exhibit impeccable pastry knowledge, accurate knife skills and the ability to lead and motivate staff.
• Culinary/pastry training or degree preferred, but not required.
• Requires the ability to work organized and within a team environment.
• Requires a valid Clark County health card.
• Candidates must be a minimum of 18 years of age.
