Checks recipes, retrieves raw product/ingredients and prepares (scales) containers/measures for placement into industrial mixer to make dough sponge.
Operates/monitors sponge/dough mixer through automated controls to make dough sponge.
Mechanically and manually removes dough sponge from mixer into sponge trough, transports trough to fermentation area for curing or returns risen sponge trough to automatic conveyor for loading into mixer.
Transports sponge trough to staging area for curing or returns risen sponge
Places additional ingredients into mixer hopper prior to adding the dough sponge and completing the mixing cycle
Mechanically removes finished dough into dough trough and places it in staging area or in position for automatic elevator loading into the divider machine.
Performs site cleanup as necessary.
Open door and watch for “clean up” (dough mixed together) and monitor to add other ingredients until ready to “kick out” of mixer into trough
Places ingredients into mixer hopper according to the recipe requirements of current production cycle.
Ensure ingredients are accurately measured and added at the proper time to ensure dough is proper consistency.
Set valves and meters on proper settings
Ensure troughs are cleaned before next dough is poured in a trough
Push trough to chute or stage trough on floor.
Spray mixer/trough with vegetable oil using hose.
Monitor to assure dough is proper consistency throughout mixing process.
Keep work areas clean and free of accident hazards.
Record data for runtime, cleanup for critical control points data charts.
Take appropriate action to ensure the integrity and sustained certification of the SQF system.
Responsible for reporting and taking any necessary action to prevent food safety and food quality problems from occurring.
Responsible for following and enforcing procedures outlined in the Food Safety Plan and the Food Quality Plan and any other programs that support the SQF system and other 3rd party audits.
Must have a high school diploma or GED.
Must be able to read, write, and speak English.
Must be able to work any hours and holidays.
Must be able to work varied shifts.
Must be able to push, pull, lift, carry, squat, twist, kneel, and reach.
Must be able to lift up to 50 pounds.
Follow Personal Protective Equipment (PPE) guidelines- equipment required will include hair nets, ear plugs, safety glasses, safety shoes.
